Pumpkin Turkey Chili
Ingredients
- 2 Tbsp EVOO
- 1.5 large yellow onion, chopped
- 3 garlic cloves, minced
- 1 chipotle chili pepper in adobo, minced
- 2 lbs 93/7 ground turkey
- 1 15oz can of organic pumpkin puree
- 1 15oz can of organic cannellini beans
- 1 Tbsp ground coriander
- 1 Tbsp paprika
- 2 Tbsp chili powder
- 1 tsp dried oregano
- 1 tsp ground cinnamon
- ¼ tsp ground cloves
- 2 cups homemade chicken bone broth
- 1 can Sierra Nevada Celebration Ale (or a seasonal brown ale)
- 2 Tbsp masa harina
- 1 Tbsp salt
- ½ Tbsp ground pepper
Directions
- Heat oil in a medium Dutch oven over medium-low. Add onion and garlic, and cook, stirring occasionally, until tender, about 5 minutes.
- Stir in turkey, coriander, paprika, cinnamon, cloves, oregano, chili powder, pepper and salt; cook, stirring occasionally, until turkey is browned, about 5 minutes.
- Stir pumpkin, bone broth, and beer into turkey mixture. Bring to a simmer over medium-high, stirring occasionally. Reduce heat to medium-low and cook about one hour.
- Add beans and masa harina, stirring occasionally for five minutes.
- Serve with sour cream, shredded cheese (e.g. Monterey jack, gouda) and minced onions with sourdough as a side.
